Ingredients

  • 1½ cups salsa roja (your favorite — we love Del Primo Homemade Red Salsa)
  • ½ white onion, finely chopped
  • 1 tbsp vegetable oil
  • Fresh cilantro, for garnish
  • Totopos, for serving (optional, but highly recommended)

How to Make It

Step 1 — Cube the queso panela

Cut the queso panela into even 2 cm cubes. Keeping them uniform means they'll sear at the same rate and hold their shape once the sauce goes in — no crumbly little bits lost to the pan.

Step 2 — Sear the cheese

Heat the oil in a skillet over medium-high. Add the queso panela cubes and sear until lightly golden on all sides. Don't rush this — that golden crust is what keeps the cubes firm and gives them a little toasty flavor. Remove and set aside.

Step 3 — Sauté the onion

In the same skillet, add the chopped white onion and sauté until translucent and fragrant. You're building the base of the sauce right in all that leftover flavor from the cheese.

Pour in the salsa roja and bring it to a gentle simmer for about 5 minutes. This little simmer deepens the flavor and takes any raw edge off the sauce — your kitchen will start to smell incredible right about now.

Step 5 — Coat the cheese in the sauce

Return the seared queso panela to the skillet and spoon the sauce over until every cube is coated. Let it cook another 3–5 minutes so the cheese warms through and soaks up the salsa's spice and warmth.
