Tinga is one of those recipes every Mexican family has an opinion about — smoky, saucy, a little sweet from caramelized onion, with that unmistakable chipotle warmth. The classic is chicken, but here's the thing: the soul of tinga was never the chicken. It's the sauce. Blend cooked tomatoes with onion, garlic and chipotles in adobo, and whatever you simmer in it comes out tasting like Sunday at abuela's. Ingredients

  • 400 g (about 14 oz) oyster mushrooms — shredded by hand into thin strips (canned whole mushrooms like Herdez work in a pinch — drain well and shred)
  • 2 cooked tomatoes, ¼ onion and 1 clove garlic — blended for the sauce base
  • 1–2 chipotle peppers in adobo (La Costeña), to taste — two if you like it smoky
  • 1 white onion, sliced into thin strips
  • Corn tostadas (Ole tostadas stay crisp under all that tinga)
  • Shredded lettuce, Mexican crema and queso fresco, for topping
  • Your favorite salsa, for the finish
  • 1 tbsp oil and salt to season

How to Make It

Step 1 — Blend the chipotle sauce

In a blender, combine the cooked tomatoes, the ¼ onion, garlic and the chipotle peppers in adobo. Blend until completely smooth — you want a vivid red, smoky sauce with no chunks. Taste it: one chipotle is cozy, two is taquería-level.

Step 2 — Caramelize the onion

Heat a tablespoon of oil in a wide skillet over medium heat and sauté the julienned onion until translucent with lightly golden, caramelized edges — about 4–5 minutes. Those sweet strands are half the personality of a good tinga; don't rush them.

Step 3 — Cook down the mushrooms

Add the hand-shredded setas to the skillet and cook for about 5 minutes, folding them through the onions, until they release their water and start to soften and brown at the edges. This is where they pick up that shredded-chicken texture.

Step 4 — Simmer the tinga

Pour the blended tomato-chipotle sauce over the mushrooms, season with salt, and simmer over medium-low heat for about 10 minutes, stirring now and then, until the sauce thickens and clings to every strand in a glossy, brick-red coat.

Step 5 — Load the tostadas

Spread a warm, generous layer of the smoky mushroom tinga over each crisp corn tostada. Go right to the edges — a shy tostada helps no one.

Step 6 — Top and serve

Finish with fresh shredded lettuce, a zigzag of crema, a generous sprinkle of crumbled queso fresco and a spoonful of your signature salsa. Squeeze of lime if you're feeling fancy. ¡Provecho!
